It depends upon which time of the day you evolve For example your rockruff can evolve in lycanroc(midday) from morning 7:00-17:00 and 18:00-19:00 It can evolve into lycanroc(dusk) from 17:00-18:00 It can evolve into lycanroc(midnight) from 19:00-7:00 depends upon time in you time zone

you can check this in pokedex immediately after catching that particular pokemon (which is above forms or you can check before login to the game)
