Galar pokemon can be caught on live maps. Once you beat all galar gyms (They are on the live maps), you'll be able to encounter galar legendaries. (Note: This is just what I think...I don't really know)

You might have enabled the legacy maps switch in the options tab. To disable it, go to the options tab, top left there is a switch for disabling legacy maps. When disabled, you'll be able to see the live maps
